About Chef Justin Leboe
Chef Justin Leboe is the sort of chef guests will follow anywhere. Luckily, that just means a short drive west to Banff where the former Model Milk and Pigeonhole star continues to leave his mark on the culinary scene in the iconic mountain town. Chef Leboe spent his early career learning in some of the most prestigious kitchens in North America. Refining his skills throughout the US, Bermuda and Australia, Leboe’s travels and mentors helped trigger his entrepreneurial spirit which led to numerous award-winning restaurant openings as he shook up Calgary’s food scene. One of Calgary’s, and now Banff’s favourite chefs, Chef Leboe previously led Rush, Model Milk and Pigeonhole to the top of enRoute’s Best New Restaurant list, the only chef ever to achieve this hat trick. Chef Leboe joined Banff Hospitality Collective in the Spring of 2022 and has overseen the culinary programming and development of four new restaurant concepts, including Three Bears Restaurant & Brewery, Hello Sunshine, Lupo Italian Ristorante and most recently, Bluebird Restaurant & Lobby Bar. Recipient of the coveted 2013 Pinnacle Award for Canadian Chef of the Year in 2013, and Canada’s 100 Best awards in 2016 for Most Innovative Chef, Leboe has helped raise the profile of Calgary as a culinary destination and is now doing the same in Banff.
